Who doesn’t love a bowl of cinnamony, spiced stewed apples in the morning? I top mine with some Sheep yogurt (you can also use Greek or any plain yogurt!) and maple syrup.
Breakfast Apple Pie
Ingredients
For the Apple Filling:
3-4 medium-sized apples, (should be around 3 cups) chopped and peeled
1 tsp maple syrup
1 tsp cinnamon
1 tsp cardamom
1 tsp coconut oil
A pinch of salt
For the Crumble:
1 cup oats
1/2 cup pecans or walnuts
2 tbsp flaxseed meal
2 tbsp coconut oil, melted
2 tbsp maple syrup
A splash of water
Instructions
Preheat the oven Preheat your oven to 350°F
Prepare the Apples: Heat a medium-sized pan over medium-high heat. Add the coconut oil, chopped apples, cinnamon, maple syrup, and a pinch of salt. Stir to combine. Cover the pan for a few minutes to help soften the apples, but be careful not to overcook them, as they will continue cooking in the oven. Remove from heat when the apples are just tender.
Make the Crumble: In a food processor, blender, or using an immersion blender, combine the oats, pecans or walnuts, melted coconut oil, and maple syrup. Pulse for about 30 seconds until the mixture is sticky but still crumbly. If needed, add a splash of water to bring the mixture together.
Assemble: Lightly grease a small baking dish with coconut oil or line it with parchment paper. Spread the cooked apples evenly in the dish. Use your fingers to sprinkle the crumble mixture over the top of the apples.
Bake: Place the dish in the preheated oven and bake for 15-20 minutes, or until the crumble is golden brown.
Serve: Let cool slightly before serving. Enjoy warm as a breakfast or snack!
