Crispy Turmeric Ginger Citrus Chickpeas
For salads, soups, or one their own as a protein packed snack!
Ingredients
1 can of chickpeas, drained & rinsed
1 TB coconut oil
1 tsp ginger
1/2 tsp turmeric
1 small orange, juice and zest
¼ tsp black pepper
½ tsp sea salt
1 TB honey
Directions
In a saucepan on medium heat, add in coconut oil. Place chickpeas on a towel and pat gently to dry. Try to absorb as much of the liquid as possible (this helps them get crispy!)
Add in ginger and turmeric and stir.
Leave on medium heat until you hear chickpeas pop. Add in fresh orange juice to “deglaze” the pan, and continue on medium heat until all liquid is gone.
Take off heat, add in the zest of one orange and drizzle with honey.
