This carrot salad is super easy to make, has such a great crunch, and is full of vitamins and minerals. Although I’ve been making this salad for years, I’ve heard a lot of talk recently about the benefits of eating raw carrots daily for hormone and thyroid health thanks to Dr. Peat and there is a lot of interesting science behind it! Essentially, carrots are high in fiber which helps make for a healthy gut flora by cleaning out the intestines and it may also help remove excess estrogen found in the body. Adding in some seaweed gives this salad a little nutrient boost thanks to the minerals found in seaweed!
