These remind me a lot of pancakes I had visiting Ireland as a kid. I love a fluffy pancake, a buckwheat pancake, aebleskivers, a crepe, etc. but there is just something nostalgic about these flat, custardy pancakes to me. The biggest appeal to me is how easy they are to make, because no one really has the time to measure out a bunch of ingredients on a weekday morning, right? Once you get the hang of the recipe you can really throw together in a pinch! These are a great breakfast because they satisfy a sweet tooth without a big sugar crash and you can add almond butter for protein, cinnamon to balance blood sugar, and whatever seasonal fruit you have on hand.
