Rosemary & Thyme Honeynut Squash Risotto
Comfort in a bowl. The perfect meal for those dark chilly nights that feel like midnight when it's really only 6 pm.
The weather is downright chilly lately and I am L-O-V-I-N-G it. At the end of the day it’s so nice to sit down to a comforting meal. Now that we are in the Fall/Winter seasons, it’s so important to continue eating those warming foods that are good for the body’s circulation and digestion. Spices, herbs, root vegetables, grains, and broths are all ideal ways to keep warm during the cooler months. One of the meals I love to make is a nourishing risotto full of root veggies and herbs. The best part of making risotto is having it the next day as arancini! Here is an arancini recipe that is similar to what I make.
Ingredients
4 cups (32 ounces) vegetable broth
1 cups arborio rice
3 TB roughly chopped herbs (rosemary, thyme, sage)
2-3 honey nut squash (about 2 pounds), peeled and sliced into ½” cubes (you can also use butternut squash)
1 large leek
2 TB white wine, optional
2 TB unsalted butter
Freshly ground black pepper or red pepper flakes, to taste
Pecorino, to taste
Directions
On medium heat, cook leeks in olive oil until soft. Add in butter and chopped fresh herbs. Add a splash of white wine to deglaze. Add in diced squash and cook down until soft. Add in rice and stir around to coat all the grains. Add in broth. Bring to a quick boil, 2-3 minutes, and then return to a medium low simmer, stirring occasionally when needed. Turn off heat once liquid is absorbed and cover with lid. Top with freshly grated pecorino!
Nourish | This is a really stick to your bones meal, which we need when the weather is brisk! Warm foods are easier for the body to digestion and can help with a sluggish digestion. You could also use bone broth if that suits you to really amp up the nutrients! Traditional Chinese Medicine and Ayurveda both teach that we need to eat in a cyclical matter — changing with the seasons. Amp up that digestive fire with herbs, spices, and cozy foods.
