Spiced Apple Muffins with Brown Sugar Oat Crumble
Muffins
1 ½ cups whole wheat flour
½ cup coconut sugar
2 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 tsp ground cinnamon
½ tsp ground nutmeg
¼ tsp ground cardamom
1 large egg
½ cup almond milk (or any other milk)
¼ cup plain yogurt (I use sheep yogurt in mine, use plain coconut yogurt to make dairy free!)
¼ cup melted butter (or coconut oil)
1 tsp vanilla extract
1 cup diced apple (about 1 small apple)
Brown Sugar Oat Crumble Topping
¼ cup rolled oats
¼ cup brown sugar
2 tbsp whole wheat flour
2 tbsp cold butter, cut into small pieces (or sub Apple butter for extra sweetness and to make dairy free)
½ tsp ground cinnamon
Instructions:
1. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.
2. Prepare the dry ingredients: In a large bowl, whisk together 1 ½ cups whole wheat flour, ¾ cup coconut sugar, 2 tsp baking powder, ½ tsp baking soda, ¼ tsp salt, 1 tsp ground cinnamon, ½ tsp ground nutmeg, and ¼ tsp cardamom.
3. Prepare the wet ingredients: In another bowl, whisk together 1 large egg, ½ cup almond milk, ¼ cup plain sheep yogurt, ¼ cup melted butter, and 1 tsp vanilla extract until smooth.
4. Combine the wet and dry ingredients: Pour the wet ingredients into the dry ingredients and gently mix until just combined. Avoid overmixing to keep the muffins tender.
5. Add the apples: Toss 1 cup of diced apple with 1 tbsp flour to prevent it from sinking, then fold the coated apple pieces gently into the batter.
6. Prepare the crumble topping: In a small bowl, mix together ¼ cup rolled oats, ¼ cup brown sugar, 2 tbsp whole wheat flour, and ½ tsp ground cinnamon. Add 2 tbsp cold butter pieces and use your fingers or a fork to combine until the mixture resembles coarse crumbs.
7. Fill the muffin tin: Spoon the batter into the prepared muffin tin, filling each cup about ⅔ full. Sprinkle a generous amount of the crumble topping over each muffin.
8. Bake: Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
9. Cool and serve: Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
