Big changes for 2025 & a recipe for almond butter soba noodle salad!
HAPPY 2025! Hi, friends! It’s been awhile. I have taken a step back to reevaluate my approach here on Substack and I am really excited for what this year will bring.
To bring you up to speed (or if you are new here!) — I’m Taylor, a certified holistic health coach whose goal is to make wellness, cooking, and nutrition joyful and realistic. Whole Nourish is here to provide you with practical, approachable nutrition guidance and easy, wholesome recipes for you and your family. But it also embraces the reality of nourishing yourself in a life that’s busy, creative, joy-filled, and yes, sometimes a little messy.
Over the past year, I’ve taken a deeper look at my own cooking, wellness routines, and how I approach family nutrition. Being a mom to a newly 3-year-old has taught me so much—it’s been a season of relearning, adjusting, and finding ways to make nourishment both simple and meaningful for our family. To be quite honest, the past year has really thrown me a curveball in the kitchen. Trying to juggle home life, feeding my family, a diy home renovation, a half renovated kitchen, growing food and maintaining our property, running a business, and navigating motherhood has been a beautiful but challenging balancing act. But it’s also helped me reconnect with what truly matters: simplifying nourishment, creating rituals that feel good, and finding joy in the small moments. That is something new I hope to bring to this space.
I am committed to posting once every 2 weeks to this space in 2025 and I really hope you will all join me! I’ll be sharing what we are eating as a family, some wellness favorites, nutrition guidance & tips, new recipes developed by yours truly, and much more!
Also! I’m also so excited to pour more love and energy into my business that launched last month, Oak Meadow Homestead. My goal is to make herbal nourishment approachable and transform it into a beautiful ritual you can weave into your everyday life. From calming tea blends (hand blended by yours truly) to thoughtfully curated pieces that inspire a connection to nature and the seasons, I want to help you bring more intention and joy into your daily rhythm. My favorite tea blend at the moment is Nurture — a blend that is so restorative and calming for daily use.

Who wants the easiest almond butter soba noodle salad recipe!?
I’m not exaggerating when I say I make this for lunch at least once or twice a week. It’s easy to throw together, endlessly customizable, and packed with flavor. Plus, my toddler loves noodles and anything with Asian-inspired flavors, so this dish is a win for us both. It’s sweet, salty, and satisfying (you might want to skip the kale if your little one isn’t a fan of greens).
Nutritionally, soba noodles made from buckwheat are rich in vitamins and minerals, naturally gluten-free, anti-inflammatory, and help support balanced blood sugar. Pair it with your favorite protein—baked tofu, chicken, or a fried egg—for a complete, nourishing meal.
Super Green Almond Butter Miso Soba Noodles
Ingredients
8 oz soba noodles
1 tbsp white miso
1/4 cup crunchy almond butter
1 tbsp sesame oil
2 tbsp coconut aminos
2 tbsp white sesame seeds
1/2 cup lacinato kale, destemmed, massaged, and thinly sliced or fresh spinach
Fresh green onions (for garnish)
Directions
Cook the soba noodles according to the package instructions. Once cooked, rinse under cool water until completely chilled.
In a mixing bowl, whisk together the miso, almond butter, sesame oil, and coconut aminos until smooth. Add a splash of water to thin the sauce to your desired consistency.
Toss the chilled noodles with the sauce until evenly coated. Add the kale and sesame seeds, and toss again to combine.
Garnish with fresh green onions and any of your favorite toppings.
